Green Coffee Academy

IMA Coffee, in partnership with b.farm, is launching the first edition of the Green Coffee Academy: an all-round training course on green coffee specifically targeted at coffee professionals.

An experiential journey that will start off in the plantations of Honduras and end in the research facilities of IMA Coffee Lab.

The Green Coffee Academy’s main theme is the green coffee supply chain – from the plantation all the way to cleaning and roasting plants.

ORIGIN OF THE PROJECT

The project stems from the need to investigate the origins of green coffee in order to better understand its botanical species and varieties, harvesting and processing techniques, and clarify which possible green coffee defects are original faults and which ones are acquired during progress through the supply chain.

The goal of this full immersion initiative will be to improve knowledge of the raw materials and the supply chain – from the growing countries all the way to the roasting plants – in order to identify the virtuous dynamics that help obtain a quality drink by eliminating waste and any defects that might become apparent when coffee is in the roasting phase and especially in the cup; another goal is to make product processing more efficient by using low energy impact technologies. In-depth knowledge of the product and of the technologies necessary to correctly process raw materials give supply chain players the right tools to be able to implement corporate social responsibility projects.

The “Coffee Camp Honduras 2023” is a training campus, based in Las Capucas, Honduras, in the Finca Rio Colorado plantation, from February 23rd until March 2nd for the Aromateller Expert Short course, or from February 23rd until March 6th 2023 for the Aromateller Expert Full course.

Training Day – Green Coffee Skills

One or two days of qualifying training at the IMA Coffee Lab green coffee reception and cleaning facility. By signing in for the training day following the SCA Coffee Skills Program, each participant will be able to discover key aspects of green coffee. Participants of the intermediate certification will take a two day course.

Academy Day – Green Coffee Systems

During the day, it will be possible to see the Coffee Lab’s green coffee processing plant in operation, including basic cleaning technologies and optical-colour sorting, highly energy-efficient handling and dosing systems, designed to guarantee top hygienic design standards with minimal maintenance requirements. Cupping sessions and comparative roasting tests will be carried out according to the modular method.

Coffee Camp in Honduras

The “Coffee Camp Honduras 2023” has just ended. A training campus, based in Las Capucas, Honduras, in the Finca Rio Colorado plantation, from February 23rd until March 2nd for the Aromateller Expert Short course, or from February 23rd until March 6th 2023 for the Aromateller Expert Full course.

The event, organised and coordinated by b.farm in conjunction with the Las Capucas COCAFCAL growers cooperative and Umami Area Honduras, included a trip to visit the coffee plantations of Las Capucas and Francisco Villeda growers. Each participant has been able to attend, practise and learn all the stages of quality Arabica coffee production, tutored by a team of b.farm experts and authorised SCA trainers.

In addition to the plantation experience, SCA Coffee Skills Program training has been delivered, with the subsequent granting of Sensory skills and Green Coffee Skills foundation and intermediate levels certificates; these courses have been taught at the local training school, in fully equipped classrooms.

Other dedicated campuses trained Aromatellers, i.e. experts who must know and be able to give details on the whole coffee supply chain – from the plantation to the cup, as well as possess skills in fields ranging from sensory analysis to the entire coffee production chain.

Training Day • Green Coffee Skills SCA • March 29th, 2023

After the Campus, two more IMA Coffee Lab events are scheduled for the month of March.

One day of qualifying training at the IMA Coffee Lab green coffee reception and cleaning facility. By signing in for the training day following the SCA Coffee Skills Program, each participant will be able to discover key aspects of green coffee including production, processing, classification, shipping, storage, arrival at destination, as well as coffee portfolio management and contracts. Learners will take a deeper look into more advanced topics like the decaffeination processes, green coffee seasonality, defects and positive attributes as they relate to green coffee contracts. The course tasting sessions will be performed using the SCA cupping protocol. Participants will be able to obtain an SCA Green Coffee Skills certification, for Foundation and Intermediate levels. Participants of the intermediate certification will take a two day course. The training will be delivered by a team of SCA authorised experts and trainers from IMA Coffee and b.farm. 

Academy Day • Green Coffee Cleaning and Processing Systems • March 30th, 2023

The final stage of the Green Coffee Academy will be the Academy Day, a day of sharing and training attended by insiders but also open to the general public after registration, which includes a program packed full with papers and workshops on green coffee, with the participation of coffee experts, roasters and international producers. During the day, it will be possible to see the Coffee Lab’s green coffee processing plant in operation, including basic cleaning technologies and optical-colour sorting, highly energy-efficient handling and dosing systems, designed to guarantee top hygienic design standards with minimal maintenance requirements.

Cupping sessions and comparative roasting tests will be carried out according to the modular method. Participants will also have the opportunity to get to know green coffee dealers and test the best batches exclusively.
